
Chocolate Chip Banana Bread

Healthy lunch snacks are always a welcome addition to the recipe book! This healthier banana bread is perfect to throw in your kids lunches with dried fruit, a yoghurt, and carrot sticks on the side. A simple and healthy ‘treat’ recipe, it is dairy-free, contains no refined sugar, and is made with 100% whole grain flour.
Ingredients
- 3 ripe bananas, mashed
- 2 eggs, beaten
- 1/2 c. maple syrup
- 1/2 tsp vanilla extract
- 2 c. whole wheat or spelt flour
- 1/4 c. ground flax
- 1 tbsp. chia seeds
- 3/4 tsp. sea salt
- 1 tsp. aluminum-free baking powder
- 1/4 tsp. cinnamon
- 1/3 c. of chocolate chips, or 1/2 a dark chocolate bar, chopped
To prepare:
Preheat oven to 350F. Lightly grease (or line) a loaf pan.
Combine all ingredients, pour in pan, and bake about 55-60 minutes.
Make a cup of tea, put your feet up, and enjoy!
