
Strawberry Banana ‘Nice Cream’

This healthy ice cream is a perfect go-to treat for summer – one you can feel good serving your kids and one you don’t have to feel guilty eating! It is super yummy – and it’s sugar and dairy-free.
Tip: Cut up ripe bananas before they brown and throw them in the freezer in a container. If you have pre-frozen bananas, you can whip this up in five minutes.
Ingredients
- 2 bananas, cut into chunks and frozen
- 1 cup frozen strawberries
- 1/2 c. coconut or almond milk
- 1/2 tsp pure vanilla extract
- 1/8 tsp cinnamon (optional, I prefer it without, my son prefers it with)
Instructions
Blend banana chunks first until smooth. You will have to stop, stir, and restart the processor a couple of times to do this.
Once bananas have formed a thick, smooth paste, add the rest of the ingredients and process until smooth.
This melts quickly, so serve immediately or pop in freezer until you are ready to eat. (It will need to soften it at room temperature for a few minutes if you re-freeze it.)
