Mango Salsa Recipe

Summer meals are so fun to prepare! This Mango Salsa is a colourful pop of tartness that mixes well with meals (especially freshly grilled salmon) or can stand alone as a nutritious snack. It tastes best after sitting refrigerated overnight, so be sure to make it ahead – and make enough for leftovers!

Pro parenting tip: if you’re tight for time, buy the pre-cut mango from the deli section. Peeling and chopping mangos can be frustrating work and skipping that first part can make this a much quicker dish to prepare. Add some tortilla chips as a side and you’re good to go!

Ingredients

1 mango, peeled and diced
1 sweet red pepper, diced
2 tablespoons red onion, diced
2 tablespoons cilantro, chopped
Zest from a lime
2 tablespoons lime juice
1 tablespoon olive oil

Directions

Whisk olive oil and lime juice in a small bowl.
Combine mango, red pepper, red onion, cilantro, and lime zest in bowl that can be covered and stored in the fridge.
Add the oil and lime juice, and mix.
Additional seasonings or ingredients could be added at this point, if you wish – kosher salt, fresh ground pepper, jalapenos for a kick; the possibilities are only limited by your imagination!
Cover and chill.
