
Moose Meatloaf Recipe

The first (and so far, only) time my husband came home with a moose, I was a bit overwhelmed. There was suddenly an entire deep freeze full of meat – that I had no clue how to cook. He had a few ideas, but since I do most of the meals, I was left searching for recipes. I didn’t find many, so I made sure to jot down my experiments that worked. Here’s the best (so far) meatloaf recipe I’ve made with moose; you could easily do this with ground beef, too.
Ingredients

1 kg ground moose (or beef)

1 egg, beaten

1 apple, finely diced or shredded (red delicious is a great choice, but any type should be fine)

½ onion, diced or shredded

¼ cup bread crumbs/croutons

1 tsp oregano

1 tsp summer savory

¼ cup maple BBQ sauce, plus a few tsp to cover
Instructions
- Beat egg.
- Add to meat, apple, onion, and sauce and mix.
- Add bread crumbs and spices. Mix again.
- Form into pan.
- Brush sauce over top.
- Bake at 375 degrees for about 40 minutes.
Goes great with some garlic mashed potatoes and steamed broccoli – or fiddleheads, if you’ve got ’em!
